All of our bread contain 12-16 hour poolish.
Benefits of Poolish (preferment)
Low Glycemic Index, easy to digest, less likely to spike blood pressure.
Using a preferment can help to benefit your bread in the following ways:
- Enhanced, more complex flavors
- Increased perfume and aroma
- Shelf life is extended (bread will last longer)

King Kong
All purpose flour, whole wheat flour , cocoa powder, banana, chocolate chips (vegan), sea salt, yeast, water

THE Sourdough loaf
Whole wheat flour, oat flour, all-purpose flour, spent grain* sea salt, water and levain.
Spent grain is rich in fiber, protein, vitamins, and minerals.
It adds a nutty, earthy taste that can enhance the overall flavor profile and create a more complex and interesting bread experience.
Spent grain contains complex carbohydrates that can serve as prebiotics, this are non-digestible fibers that stimulate the growth and activity of beneficial bacteria in the gut, such as Bifidobacteria and Lactobacilli.
A healthy gut microbiota is associated with improved digestion, immune function, and overall well-being.
By incorporating spent grain into bread bakery, you can reduce food waste by repurposing a byproduct that would otherwise be discarded.
