(Long Fermentation, Small Batches)

Food for your gut!

We bake bread the slow way. Long fermentation, simple ingredients, and a cozy crust you can hear.
Our loaves are baked in small batches and available by pre-order.

All of our bread contain 12-18 hour poolish. 

Benefits of Poolish (preferment)
 
Low Glycemic Index, easy to digest, less likely to spike blood pressure.

Using a preferment can help to benefit your bread in the following ways:

- Enhanced, more complex flavors
- Increased perfume and aroma
- Shelf life is extended (bread will last longer)

All purpose flour, whole wheat flour , cocoa powder, banana, chocolate chips (vegan), sea salt, yeast, water

and 18 hours of fermentation. (Poolish)

Sourdough loaf

We bake bread the slow way. Long fermentation, simple ingredients, and real flavor. If you are looking for sourdough, we usually have a few different options, so you can choose your favorite.

Pre-order with at least 48 hours notice, since every loaf is long-fermented and baked to order.
