Our Sourdough
Every loaf is made with wild yeast (levain) and a long, slow fermentation, because good bread is not meant to be rushed.
That slow process is what gives sourdough its magic: deeper flavor, better texture, and a loaf that many people find easier to enjoy than fast, industrial bread. It’s also why we ask for at least 48 hours notice. We start the process only when you order, so your bread is baked fresh, made just for you.
What “Long Fermentation” Means Here
Most of our sourdough loaves are made at around 75% hydration and go through an 18-hour cold fermentation. That cold rest is where flavor and structure develop slowly, and where the dough transforms into something complex and alive.

*Spent grain refers to the leftover grains after the brewing process in beer production. Spent grain is rich in fiber, protein, vitamins, and minerals.
It adds a nutty, earthy taste that can enhance the overall flavor profile and create a more complex and interesting bread experience.
Spent grain contains complex carbohydrates that can serve as prebiotics, this are non-digestible fibers that stimulate the growth and activity of beneficial bacteria in the gut, such as Bifidobacteria and Lactobacilli.
A healthy gut microbiota is associated with improved digestion, immune function, and overall well-being.
By incorporating spent grain into bread bakery, you can reduce food waste by repurposing a byproduct that would otherwise be discarded.
